Once you’ve had your fill of standard Thanksgiving-on-a-roll type sandwiches, make something that tastes absolutely nothing like the holiday. Here are our best recipes for turkey leftovers and Thanksgiving leftovers.
Make roasted turkey stock with the turkey bones, then throw together a big pot of crowd-pleasing soup or stew. Mark Bittman’s turkey soup with lime and chile, Samin Nosrat’s turkey pho or Paul Prudhomme’s gumbo (subbing turkey for the chicken) are all reader favorites and brightly flavored.
You could also make turkey tetrazzini by swapping out the chicken for turkey in this recipe from Sam Sifton. It’s creamy, cheesy and spicy. Pile it in bowls, sit on the couch and watch your first holiday movie of the season.
If sandwiches are your thing, try Melissa Clark’s turkey Cubano, turkey barbecue sandwiches or turkey pitas with cucumbers, chickpeas and tahini. They’re all incredibly easy to throw together, which is exactly what you want after the cooking marathon that is Thanksgiving.

Maybe you went overboard with the stuffing. Use it to make Alexa Weibel’s delightful stuffing-stuffed mushrooms. We don’t have a recipe for it, but we hear Sam Sifton likes to press a scoopful of stuffing in a waffle iron, then use it as bread for his turkey sandwich. It’s a pro move.
If you find yourself with too many mashed potatoes — it’s a common problem, and mashed potatoes don’t reheat well — make shepherd’s pie. We have traditional and vegetarian versions. Or make these potato, salmon and spinach patties with garlicky dill cream.
Casseroles are always a good idea. This Thanksgiving leftovers enchilada pie is ridiculously easy (don’t tell anyone, but it calls for store-bought enchilada sauce). You can tuck leftover turkey, greens, sweet potatoes and even cornbread stuffing in between the tortillas. Paired with this leftover cranberry sauce salsa, it hits the spot. If you’re more of a traditionalist, make Julia Child’s chicken-tarragon potpie, but with, you guessed it, turkey.
And if, by unlikely chance, you have leftover pie, pop a slice into the blender with a few scoops of ice cream — pecan pie and coffee ice cream is a top-notch combination — and whiz away.
